Party cheese sticks / Štapići od sira / Juustotikkuja hyvälle seuralle

We love parties. We love hosting them, and we love feeding our guests. What we despise with a passion, however, are the few days before when we’re trying to decide what to serve. Ružmarin is never happy with repeating the thing we made last time and only answers “maybe”, “we’ll see” or “we can think about it” to Tilli’s ideas, which (understandably) drives him nuts. Tilli, on the other hand, always gets overly excited and then collapses under the pressure of nothing being finished exactly when the guests are supposed to arrive. In addition, there is always a majestic mess in the kitchen and neither one of us looks anything like the well-rested, clean, grinning people you see opening the door in the movies.

If there is one thing we love more than having time to wash the flour out of our hair before the party, it’s serving these. There is almost nothing better in the world. Made from a certified grandma recipe, these used to be the official snack of Sunday night family gatherings for years. Unfortunately, grandma wouldn’t stop bringing new trays hot out of the oven and we couldn’t stop eating them, so it had to be banned for the fear of us turning into a family of balls.

These aren’t the quickest, nor the easiest things you’ve ever done. However, most of the time spent on them is actually resting time, and there is not much you can do wrong. They will be delicious no matter if they’re too thick or too thin, and the only important step is kneading the dough until it actually forms a smooth ball, not unlike the ones we almost became. We usually double or triple this amount for a big party, prep it (mostly) before the guest arrive on sheets of baking paper covering the whole kitchen, and pop them in as the party is progressing.

What’s the best “worst” thing that can happen when you get out of bed after a party? Finding two of those lovely sticks forgotten somewhere (including the floor), reheating them in the microwave and feeling like a total bitch for not giving one to your loved one. It’s just that good.

  • 500 g flour
  • 12 g baking powder
  • 1 tsp salt
  • 500 g fresh cheese
  • 350 g butter
  • 1 egg yolk
  • 1 tsp vegetable oil
  • a handful of sesame seeds
  • rock salt
  • 500 g oštrog brašna
  • 1 prašak za peciva (12 g)
  • 1 žličica soli
  • 500 g svježeg sira
  • 350 g maslaca
  • 1 žumanjak
  • 1 žličica ulja
  • mala šaka sjemenki sezama
  • krupna sol
  • 500 g jauhoja
  • 12 g leivinjauhetta
  • 1 tl suolaa
  • 500 g tuoretta juustoa
    (maitorahkaa tai ricotta juustoa)
  • 350 g voita
  • 1 kananmunan keltuainen
  • 1 tl rypsyöljyä
  • kourallinen seesamisiemeniä
  • karkeata suolaa

    1. In a large bowl, combine flour, baking powder and salt. Knead in the softened butter and then add most of the fresh cheese.
    2. Knead for about 10 minutes, until it forms a soft, smooth dough. If it’s too sticky, add some flour, if it’s too dry, keep adding the cheese.
    3. Roll out the dough into large square. Fold all four sides over the middle like, kind of like an envelope (see picture). Wrap the small, thick square with cling film and rest in the fridge for about half an hour.
    4. Repeat the previous step 2 more times, waiting for half an hour between the steps.
    5. When you’re ready for baking the sticks, preheat the oven to 225°C. In a small bowl, combine the egg yolk and oil. Roll out the dough into about 0.5 cm thick.
    6. Spread the yolk over the whole dough, sprinkle generously with sesame seeds and some rock salts. Cut into sticks (it will get a bit sticky), separate and lay on the baking paper. Bake until golden, about 12 minutes. Serve straight out of the oven!

  1. U velikoj posudi dobro pomiješajte brašno, prašak za peciva i sol, pa umiješajte omekšali maslac i većinu sira.
  2. Mijesite desetak minuta, dok ne dobijete glatko i mekano tijesto. Ako je tijesto previše ljepljivo dodajte još malo brašna, a ako je presuho ostatak sira.
  3. Razvaljajte tijesto u veliki kvadrat debljine oko 0.5 cm, te presavijte svaku stranu prema sredini, slično kao stranice omotnice (vidi sliku). Zamotajte nastalo malo i debelo tijesto plastičnom folijom i ostavite u hladnjaku oko pola sata.
  4. Ponovite prethodni korak još dva puta, te svaki put pričekajte po pola sata do sljedećeg valjanja tijesta.
  5. Kad ste spremni za pečenje štapića, zagrijte pećnicu na 225°C. U maloj zdjelici pomiješajte žumanjak i ulje.
  6. Premažite tijesto žumanjkom te posipajte s puno sezama i malo krupne soli. Narežite na štapiće, razdvojite ih i pecite na papiru za pečenje oko 12 minuta, dok ne dobiju zlatnu boju. Poslužite odmah!

  1. Sekoita jauhot, suola ja leivinjauhe isossa kulhossa. Jos otat voin suoraan jääkaapista anna sen ennen pehmeytyä ja sitten lisää mukaan. Lopuksi lisää juustoa, jättäen hieman myöhemmille vaiheille.
  2. Vaivaa taikinaa noin 10 min. Taikinan tulisi olla tahmeata muttei liian märkää, saman kaltaista kuin pizzataikinan. Jos taikina on liian märkä lisää jauhoja ja jos se on liian kuiva lisää juustoa.
  3. Rullaa taikina isoksi ruuduksi. Taita kaikki neljä puolta, yksi kerralla, keskelle kuten kirjekuori (esimerkki yllä olevassa kuvassa). Kääri tämä taikina-paketti elmukelmuun ja pistä jääkaappiin puoleksi tunniksi.
  4. Toista tämä vaihe vielä kaksi kertaa, eli rullaa aina taikina ensin ruuduksi, taita ja sitten laita takas jääkaappiin.
  5. Lämmitä uuni 225 asteeseen. Riko kananmunan keltuaiset pienessä kulhossa ja sekoita mukaan öljyä. Rullaa taikina kunnes noin 0.5 cm paksu.
  6. Levitä keltuais-öljy sekoitus taikinalle ja ripottele päälle karkeata suolaa ja seesamisiemeniä. Leikkaa taikina ohueiksi tikuiksi (tästä voi tulla haastavaa kun veitsi on tahmea) ja asettele leivinpaperille. Tikkuja voi paistaa erissä, yksi pelti kerralla, että tarjolla on aina tuoreita tikkuja. Paista tikut uunissa noin 12 min kunnes niissä on hyvä rusketus.
