pizza_3 Hidden inside every kitchen and waiting to make the most delicious pizzas is a traditional Italian wood-fire oven. Where is it you ask? Have a look around your kitchen, what do you think? Here’s a hint, its under your stove-top and doesn’t seem all that exciting. Correct, its the normal oven, and it can provide you with that crispy, golden crust with just a few tips. First, crank that temperature up! We challenge you to find an oven where the dial doesn’t reach 250 celsius. so turn it to around that and let it heat up. Also, keep the baking trays in the oven before sliding on the pizza, that way the dough will start cooking right away and give you the perfect crunch.

In this pizza we are celebrating the summer, with thyme straight from our balcony and figs that we bought on the way back to Zagreb from a crazy Slovenian guy who promised us that they were “his number one”. Yep, we know, figs are hard to get in many places, but you can substitute them with some other sweet summer fruit, such as pear. Luckily thyme is easy to find, and grow, everywhere. The picture below is from the garden on Tilli’s summerhouse, where most other herbs and veggies struggle to grow while the thyme is always having a party. Just look at those beautiful flowers, that herb is really happy to be growing!

Making pizza dough from scratch is something we have been doing for a while, so leave those pre-made doughs behind and get your hands dirty. There’s something so liberating about kneading dough, it’s the perfect medium to get out your week’s frustration, and the more of that you have the softer the dough will be. That’s fair isn’t it? Best of all, this is a great way to impress your friends. What’s better than a freshly made pizza that looks like the ones from the fancy Italian restaurants, not much right? So think of some interesting flavors and start rolling out your dough!

Pizza dough:

  • 150 g wholewheat flour
  • 100 g all-purpose flour
  • 1/2 packet (4 g) instant yeast
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 1/2 cup + 2 tbsp water

Toppings:

  • 1 tbsp olive oil
  • 250 g mozzarella
  • 6 fresh figs
  • 80 g prosciutto
  • 10 sprigs thyme
Tijesto za pizzu:

  • 150 g integralnog brašna
  • 100 g oštrog brašna
  • 1/2 paketića (4 g) suhog kvasca
  • 1/2 žličice soli
  • 3 žlice maslinovog ulja
  • 1/2 šalice + 2 žlice vode

Nadjev:

  • 1 žlica maslinovog ulja
  • 250 g mozzarelle
  • 6 svježih smokava
  • 80 g pršuta
  • 10 grančica timijana
Pizza taikina

  • 150 täysjyväjauhoja
  • 100 g vehnäjauhoja
  • 1/2 paketti (4 g) kuivahiivaa
  • 1/2 tl suolaa
  • 3 rkl oliiviöljyä
  • 1/2 kuppia + 2 rkl vettä

Täytteet

  • 1 rkl oliiviöljyä
  • 250 g mozzarella juustoa
  • 6 tuoretta viikunaa
  • 80 g ilmakuivattua kinkkua
  • 10 timjamin vartta

  1. To make the dough, combine both types of flour, yeast and salt. Mix well, add 2 tbsp of olive oil, 1/2 cup of lukewarm water and knead for 10-15 minutes.
  2. At the end of the kneading, the dough should be soft to the touch, only slightly sticky and come back after being lightly pressed with your finger. If it’s too sticky, sprinkle with some more flour and keep kneading. If it’s too dry and doesn’t get soft, add a bit more water. Depending on the flour, you will probably need to add at least 2 more tbsp of water.
  3. When the dough is ready, put it in a bowl, spread the leftover 1 tbsp of olive oil on top, cover with a kitchen towel and let rest in a warm place for about an hour, until doubled in size.
  4. Before you start rolling out the dough, preheat the oven to 250°C with two baking trays warming up inside.
  5. Divide the dough in half. Roll out each half on a sheet of baking paper into your desired shape until it’s very thin.
  6. Spread 1/2 tbsp olive oil on the bottom, then crumble half of mozzarella over it. Add some prosciutto slices, fig pieces and whole sprigs of thyme.
  7. Take the baking tray out of the oven and while it’s still super hot slide the pizza with the baking sheet onto the tray (you will probably need a helping hand for this). Bake for about 12 minutes, until the dough is slightly browned and the cheese is bubbling on top. Slice and serve hot! Repeat with the other pizza.

  1. U velikoj zdjeli dobro pomiješajte obje vrste brašna, kvasac i sol. Dodajte ulje, pomiješajte, pa ulijte 1/2 šalice tople vode. Mijesite 10-15 minuta.
  2. Na kraju miješenja, tijesto bi trebalo biti mekano, samo malo ljepljivo i nakon što ga lagano pritisnete prstom trebalo bi se polako vratiti. Ako je previše ljepljivo, posipajte s još malo brašna i nastavite mijesiti. Ako je presuho i nije mekano, dodajte još malo vode. Ovisno o brašnu, vjerojatno će vam trebati još barem 2 žlice vode.
  3. Kad je tijesto gotovo, stavite ga natrag u zdjelu i premažite preostalom žlicom ulja. Prekrijte kuhinjskom krpom i ostavite na toplom oko sat vremena, dok se tijesto ne udvostruči.
  4. Prije nego počnete raditi pizze, zagrijte pećnicu na 250 stupnjeva s dva lima za pečenje unutra.
  5. Podijelite tijesto na 2 dijela. Razvaljajte polovicu na papiru za pečenje dok tijesto ne bude sasvim tanko i željenog oblika.
  6. Premažite s pola žlice maslinovog ulja, namrvite pola mozzarelle i dodajte dio kriški pršuta, narezanih smokava i cijelih grančica timijana.
  7. Izvadite lim za pečenje i iz pećnice i dok je još jako vruć prebacite na njega pizzu zajedno s papirom za pečenje (za ovo će vam vjerojatno trebati mala pomoć). Pecite pizzu oko 12 minuta, dok tijesto ne dobije lijepu boju. Poslužite vruće i ponovite s drugom pizzom.
  1. Yhdistä molemmat jauhot, kuivahiivaa ja suola kulhossa. Sekoita hyvin ja lisää mukaan 1/2 kuppi huoneenlämpöistä vettä sekä 2 rkl oliiviöljyä. Vaivaa 10-15 min, kunnes taikinaa muodostuu.
  2. Tässä vaiheessa taikinan pitäisi olla pehmeätä, jonkun verran elastinen ja vain hieman tahmea. Jos taikina tuntuu olevan liaan tahmea, ja jää vaan kiinni sormiin, lisää hieman jauhoja ja vaivaa lisää. Ja jos taikina tuntuu olevan liian kuiva lisää vettä aloittaen noin 2 rkl vettä.
  3. Kun taikinan koostumuus on täydellinen, laita se kulhoon ja levitä sen päälle 1 rkl oliiviöljyä. Peitä kulho keittiöpyyhkeellä ja anna sen istua lämpimässä paikassa (vaikka tietokoneen laturin päällä) puolisen tuntia kunnes se tuplaantuu koossa.
  4. Lämmitä uuni 250 asteeseen ja jätä uuniin kaksi uunipeltiä. Jaa taikina kahteen palaan ja laita eka pala leivinpaperin päälle. Rullaa ohueksi pizzan pohjaksi. Pizzat näyttävät kuitenkin aidommilta kun ne eivät ole täydellisiä ympyröitä, niin muoto on täysin sinusta kiinni.
  5. Levitä pizzan pohjalle 1/2 rkl oliiviöljyä ja sitten mozzarella juusto paloja. Lisää sitten viikunan ja kinkun palasia sekä timjamin varsia.
  6. Otta uunista yksi kuuma pelti ja vedä leivinpaperilla oleva pizza nopeasti sen päälle. Tässä vaiheessa on hyvä olla joku auttamassa. Paista uunissa noin 12 minuuttia, kunnes taikina on rapeata ja juustossa alkaa näkyä tummia täpliä. Paloittele ja tarjoile. Toista toisen taikinan palasen kanssa.
