Chilly Cucumber soup / Osvježavajuća juha od krastavaca / Viileä kurkkukeitto



When we cannot go to the beach for a weekend escape from the heat in Zagreb we think of all types of different ideas to stay cool while the temperatures rise. As much as we love the sauna we prefer not to have our apartment turning into one every time we use the oven. Putting some watermelon and mint into the blender is sure delicious, but we can’t have that for dinner.

A refreshing, nutritious option is a cold cucumber soup. Avocado adds creaminess and those supposedly healthy fats that everyone likes talking about, so there’s no need to feel guilty topping it off with some feta. If it’s not so hot where you are, hmm Finland, you can have this soup anyway and imagine yourself enjoying the sun at the beach with us.


For those of you who can’t stop daydreaming about this beach it can be found in Rabac, Istria.

  • 4 medium sized cucumbers
  • 1 avocado
  • 400 g liquid yogurt
  • 2 spring onions
  • juice of 1 lemon
  • 1/2 tsp cayenne pepper
  • small bunch of mint
  • 4 krastavca srednje veličine
  • 1 avokado
  • 400 g tekućeg jogurta
  • 2 mlada luka
  • sok 1 limuna
  • 1/2 žličice kajenskog papra
  • mali stručak svježe mente
  • 4 normi kokoista kurkkua
  • 1 avokaado
  • 400 g jogurttia
  • 2 kevätsipulia
  • sitruunan mehu
  • 1/2 tl cayenne pippuria
  • pieni kourallinen minttua


…and this is where our cucumbers come from.

  1. Halve and peel the cucumbers as well as scoop out the seeds. Cut them in large chunks and place in the food processor. FInely chop the spring onions, peel the avocodo, and add to the food processor along with the yogurt. Toss in the mint leaves, a generous amount of salt and pepper, and whiz.
  2. Add some lemon juice and keep whizzing until you get a thick, creamy soup. Taste the soup and add more lemon juice, salt, pepper or cayenne pepper until it tastes great.
  3. If you want the soup finer, whiz a bit more and then pour into bowls.Serve with feta and a bit of cracked pepper.
  1. Ogulite krastavce, prepolovite ih po dužini i izvadite im sjemenke. Grubo narežite krastavce, oguljeni avokado i mladi luk, pa sve ubacite u blender. Dodajte jogurt i mentu te dobro posolite i popaprite.
  2. Ulijte sok jednog limuna i nastavite miksati dok ne dobijete gustu, kremastu juhu. Kušajte i dodajte još soli, papra, kajenskog papra i limuna prema potrebi.
  3. Poslužite s mrvljenom fetom i svježe mljevenim paprom.
  1. Puolita ja kuori kurkut ja kauhaa ulos siemenet. Leikkaa kurkut paloiksi ja laita monitoimikoneeseen. Lisää monitoimikoneeseen hienonnetut kevätsipulit ja kuoritut avokaadot. Lisää vielä jogurtti ja sitten anna monitoimikoneen sekoittaa kaiken.
  2. Lisää mukaan hieman sitruunan mehua ja sekoita kunnes syntyy paksu, kermainen keitto. Maista ja lisää sitruunanmehua, suolaa, pippuria sekä cayenne pippuria kunnes maistuu hyvältä.
  3. Jos keitto on vielä liian paksua, sekoita kunnes keitto on sellainen mistä pidät. Tarjoile feta juuston ja tuoreen pippurin kera.
