Smoked Salmon Baked Potatoes / Krumpir u foliji s lososom / Kylmäsavulohi uuniperunat

bakt_3When Ružmarin was little, she used to think that potato baked in foil was the very peak of haute cuisine. Some years later, it became a thing you would talk about as Advent was approaching, and with it the prospect of scoring a baked potato at the market in Vienna. Then one summer, Tilli & Ružmarin spent a perfect Finnish weekend with a couple of friends, with everything from berry picking to drinking beer outside the sauna while the sun was still setting over the sea. That weekend, we also learned that our friend makes the meanest baked potatoes, right at home! Since then, it became a staple of Tilli’s cooking and the potatoes would be coming out of the oven when hungry Ružmarin arrived home from her 4-hour-long Finnish courses. It’s what we make when we’re in a need of serious comfort food, or for just about any other made up reason.

Baked potatoes are not a fast way to satisfy your craving, it takes about an hour for them to bake and it can seem much longer. That said, it’s probably one of the easiest dishes you’ll ever make, and while the potatoes are in the oven, you can mix the toppings in 10 minutes and spend the rest of the hour staring through the oven door. Get some good baking potatoes (rosamundas are amazing), play around with the toppings, and enjoy life, it will be a happy one :)

 

  • 4 large potatoes
  • olive oil
  • 150 g sour cream
  • 75 g cream cheese
  • 2 spring onions
  • 100 g smoked salmon
  • 1/2 lime
  • 4 velika krumpira

  • 150 g kiselog vrhnja
  • 75 g krem sira
  • 2 mlada luka
  • 100 g dimljenog lososa
  • 1/2 limete
  • 4 isoa perunaa
  • oliiviöljyä
  • 150 g ranskalaista kermaa
  • 75 g tuorejuustoa
  • 2 kevätsipulia
  • 100 g kylmäsavustettua lohta
  • 1/2 lime

  1. Preheat the oven to 200°C.
  2. Wash the unpeeled potatoes well, then use a sharp knife to cut a cross in each. It should go at least half-way deep into the potato, and be careful not to slice it in half. Sprinkle with salt, rub with a splash of olive oil and tightly wrap in alu foil. Place on a baking tray and cook in the oven for about 1 h, until the fork goes through the potato easily.
  3. While the potatoes are baking, prepare the topping. Combine sour cream, cream cheese, lime juice, salt and pepper in a bowl. Taste and adjust the seasoning.
  4. Finely chop the green tops of the spring onions, saving the rest for another dish. Slice the smoked salmon, then add it to the cream along with the spring onions. Reserve a bit of each for decoration.
  5. When the potatoes are ready, remove the foil and serve with creamy smoked salmon.

  1. Zagrijte pećnicu na 200°C.
  2. Dobro operite neoguljene krumpire, pa zarežite križ na svakom krumpiru barem do polovice dubine, pazeći da ih ne prerežete do kraja. Posolite, pošpricajte maslinovim uljem i čvrsto omotajte aluminijskom folijom. Pecite omotane krumpire na limu za pečenje oko sat vremena, dok ne omekšaju dovoljno da ih lako možete probosti viljuškom.
  3. Za vrijeme dok se krumpiri peku, pripremite umak. U zdjelici dobro pomiješajte kiselo vrhnje, krem sir, sok limete, sol i papar. Kušajte i dodajte još začina po potrebi.
  4. Sitno nasjeckajte zelene dijelove mladog luka, a ostatak spremite za salatu ili neko drugo jelo. Narežite dimljeni losos na tanke trakice, pa ih zajedno s mladim lukom umiješajte u umak, no ostavite malo lososa i luka za ukrašavanje.
  5. Kad su krumpiri pečeni, skinite foliju, lagano ih razdvojite po sredini i poslužite s kremastim dimljenim lososom.

  2. Pese perunat ja tee veitsellä “x” muotoinen viilto jokaiseen. Viillon pitäisi olla aika syvä, noin puoli perunasta. Ole varovainen ettet kuitenkaan halkaa perunaa puoleksi. Ripottele päälle suola ja oliiviöljyä, jonka jälkeen peruna kääritään tiukasti alumiinifolioon. Laita käärityt perunat uunivuokaan ja paista uunissa noin tunnin verran, kunnes haarukka uppoaa helposti perunaan. 
  3. Samalla kun perunat kypsentyvät uunissa valmistele täyte. Laita kulhoon smetana, tuorejuusto, limen mehu, sekä suolaa ja pippuria. Maista ja säädä mausteet. 
  4. Hienonna vihreät osat kevätsipuleista. Säästä valkoiset osat seuraavalle päivälle, voit käyttää niitä sipulin sijalta. Pilko kylmäsavustettu lohi ja lisää sekä lohi että pilkottu kevätsipuli smetanan sekaan. Säästä hieman lohta ja pilkottua kevätsipulia jos haluat koristella annosta ennen tarjoilua.
  5. Kun perunat ovat kypsiä, poista folio ja tarjoile perunan päälle runsaasti lohi täytettä.
