Banana Bread / Kruh od banane / Banaanileipä

The winter has marked its arrival with a heavy dusting of snow, and along with it comes the need for comforting recipes. With the dropping temperatures also come mornings when you just don’t want to get out of bed, torturous times when the bedroom floor becomes an icy trap. A way to make these days better is to pair that cup of coffee with a warming piece of heavenly banana bread. The oats and spelt flour in the dough mean you will stay full all morning, tackling the post-festive workload with ease.

As a note, this banana bread is more of a sweet treat rather than a firm bread you spread butter on, that’s why we add some chopped pieces of chocolate straight into the batter. The bread will be moist, soft and a bit crumbly, with chocolate oozing out of it, and it tastes as good as fresh when you quickly heat it up. Don’t worry if you don’t have a bread tin, you can make it in any kind of a smaller baking tin, as long as you adjust the temperature.

  • 175 g spelt flour
  • 100 g rolled oats
  • 10 g oat flakes
  • 2 tsp baking powder
  • 125 g brown sugar
  • 2 ripe bananas
  • 2 eggs
  • 50 ml milk
  • 125 g butter
  • 40 g chocolate
  • 175 g pirovog brašna
  • 100 g usitnjenih zobenih pahuljica
  • 10 g zobenih pahuljica
  • 2 žličice praška za peciva
  • 125 g smeđeg šećera
  • 2 zrele banane
  • 2 jaja
  • 50 ml mlijeka
  • 125 g maslaca
  • 40 g čokolade
  • 175 g spelttijauhoja
  • 100 g  kaurahiutaleita
  • 10 g kaura jyviä
  • 2 tl leivinjauhetta
  • 125 g tumma sokeria
  • 2 kypsää banaania
  • 2 kananmunaa
  • 50 ml maitoa
  • 125 g voita
  • 40 g suklaata

  1. Beat butter and sugar until creamy in a large bowl. Add eggs, beat quickly, then add milk and mashed bananas.
  2. In a separate bowl combine flour, rolled oats, baking powder, and a pinch of salt.
  3. Add dry to the wet ingredients, beating until combined.
  4. Chop up chocolate and add it to the batter, mixing lightly.
  5. Butter a bread tin (silicone works best). Pour the batter into the tin and sprinkle the oat flakes on top.
  6. Bake at 180ºC for about 50-60 minutes, or until browned on all sides and a toothpick inserted into the middle comes out without crumbs.
  1. U velikoj posudi miksajte šećer i maslac dok ne postanu kremasti. Dodajte jaja i nastavite miksati, te ponovite s mlijekom i usitnjenim bananama.
  2. U drugoj posudi, pomiješajte pirovo brašno, usitnjene zobene pahuljice, prašak za peciva i prstohvat soli.
  3. Polako dodavajte suhe u vlažne sastojke dok se sve dobro ne poveže.
  4. Nasjeckajte čokoladu na sitne komadiće i lagano ih umiješajte u tijesto.
  5. Namastite kalup za kruh, ulijte tijesto na vrh i pospite ga krupnim zobenim pahuljicama. Ako nemate kalup za kruh, možete ga ispeći i u bilo kojem manjem kalupu, npr. za tortu, samo pazite da skratite vrijeme pečenja ako je sloj tijesta tanji.
  6. Pecite na 180ºC oko 50-60 minuta, ili dok kruh ne posmeđi sa svih strana i čačkalica ubodena u sredinu izađe bez mrvica tijesta. (Ovaj kruh će ispasti mekan, sočan i lagano se mrviti, pa ga poslužite za doručak uz šalicu kave ili uz sladoled od vanilije za desert. Najbolji je još uvijek topao, a ako ga ispečete unaprijed, samo ga kratko podgrijte.)
  1. Vatkaa voi ja sokeri isossa kulhossa kunnes kuohkeata. Lisää munat, vatkaa nopeasti, ja sitten lisää maito ja muussatut banaanit.
  2. Yhdistä toisessa kulhossa spelttijauhot, kaurahiutaleet, leivinjauhe ja ripaus suolaa.
  3. Lisää kuivat ainekset kosteisiin aineksiin, ja yhdistä vatkaamalla.
  4. Pilko suklaa ja lisää se taikinaan, sekoittaen hieman.
  5. Voitele leipävuoka (silikooni toimi parhaiten). Levitä taikina vuokaan ja ripottele kaura jyvät pohjalle.
  6. Leivo uunissa 180 asteessa, noin 50 min, kunnes voit pistää hammastikun banaanileivän keskelle ja poistaa sen ilman että taikina tarttuu.
