Grandma’s Finnish Blueberry Pie / Pita od borovnica finske bake / Isoäidin Mustikkapiirakka

Nostalgia is a wonderful thing, especially experienced through food. A slice of this blueberry pie brings Tilli right back to his childhood summers in Finland, sitting around a table with his family in the midnight sun while enjoying fresh baked treats from grandma. The grandparents’ summerhouse is in the town of Ii, close to Oulu, a city just a bit south of the Arctic Circle. Eventhough the winters may be harsh, the summer months are amazing, as pictured below. Picking blueberries is something that all Finns do during the summer, and Tilli’s grandmother picks so many that she has enough to store in the freezer. This way she can thaw a bag during the dark days of winter and be instantly reminded of an afternoon in July.  All Finns know about blueberry pie, as it is a symbol of summer. Now, thanks to the blueberry bushes in Ružmarin’s grandparents’ garden the Croatians are slowly being introduced to this delicacy as well!

The jam sugar listed in the ingredients (hillosokeri in Finnish) is easy to find in Finnish stores, but not as easy everywhere else around the world. We just substituted brown sugar and the pie came out almost as delicious as grandma’s. Also, most pies need a supporting actor, and this blueberry pie goes perfectly with some vanilla sauce, something else that is also easy to find in Finland. It can be made quickly by adding some vanilla sugar to whipping cream.

  • 150 g butter
  • 150 g brown sugar
  • 1 egg
  • 3 dl flour
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 dl cream
  • 3 tbsp (jam) sugar
  • 175 g blueberries, fresh or frozen
  • 150 g maslaca
  • 150 g smeđeg šećera
  • 1 jaje
  • 3 dl brašna
  • 1 žličica praška za peciva
  • 1/4 žličice cimeta
  • 1/2 dl slatkog vrhnja
  • žlice šećera (za marmelade)
  • 175 g borovnica, svježih ili smrznutih
  • 150 g voita
  • 150 g sokeria
  • 1 kananmuna
  • 3 dl jauhoja
  • 1 tl leivinjauhetta
  • 1/4 tl kanelia
  • 1/2 dl kermaa
  • 3 rkl hillosokeria
  • 175 g tuoreita tai pakaste mustikoita

  1. Preheat the oven to 175°C.
  2. Beat brown sugar and butter until fluffy, then add an egg and beat until mixed well.
  3. In a separate bowl, combine flour, baking powder and cinnamon. Add the dry mix to the butter mixture a tablespoon at a time. Add cream at the end and beat until well combined.
  4. Spread the dough evenly in a buttered pie dish. Sprinkle blueberries on top, leaving a little space around the edges. Sprinkle with sugar and bake until browned and set, about 40 minutes.

  1. Zagrijte pećnicu na 175°C.
  2. Zajedno miksajte maslac i smeđi šećer dok ne postanu kremasti, pa dodajte jaje i dobro izmiksajte.
  3. U drugoj posudi izmiješajte brašno, prašak za peciva i cimet. Dodavajte suhe sastojke mješavini s maslacem, žlicu po žlicu i uz stalno miksanje. Ulijte slatko vrhnje i nastavite miksati dok se svi sastojci ne povežu.
  4. Ravnomjerno rasporedite tijesto u namašteni kalup za pite. Prekrijte borovnicama ostavljajući malo prostora blizu rubova. Pospite šećerom i pecite do zlatne boje, oko 40 minuta.
  1. Lämmitä uuni 175 asteeseen.
  2. Vatkaa sokeri ja voi kunnes kuohkeata. Lisää kananmuna ja vatkaa kunnes seos on hyvin sekoitettu.
  3. Sekoita jauhot, leivinjauhe ja kaneli toisessa kulhossa. Lisää kuivaa seosta voi seokseen ruokalusikallinen kerralla. Lopuksi lisää kerma ja vatkaa kunnes hyvin sekoitettu.
  4. Levitä taikina tasaisesti uunivuoalle. Ripottele mustikoita taikinalle jättäen hieman vapaata tilaa reunoille. Ripottele vielä lopuksi hillosokeria taikinan päälle ja paista uunissa noin 40 min, kunnes piirakka on jähmettynyt.
