Broccoli & roasted pepper salad / Salata od brokule i pečene paprike / Parsakaali ja paahdettu paprika salaatti

Yet another night when we are too lazy to go to the store and turn to what we have in the fridge for inspiration. Luckily as it is the summer, there were a bunch of fresh veggies to use. The broccoli had finally started forming florets and we had picked it from the garden the day before, so it had to be a part of our dinner. We noticed that there was an overload of peppers, they could go nicely with the broccoli. Roasting red peppers is common all around the Mediterranean, an easy way to boost the flavor of the pepper (or paprika (or capsicum :P )). The peppers just go in a hot oven for a bit, get a bit charred, and voilà you have an exciting ingredient all of a sudden. Traditionally, long red peppers are used for their thick and sweet meat, but you can probably get away with another variety.

In line with our Masterchef mystery fridge challenge, we thought it would be interesting to see if we can plate up a fancy looking dish with our salad ingredients, something we usually don’t have time to do because our dinner is hot and smells too good to resist. Ružmarin gave up pretty quickly due to her secret love affair with broccoli, but Tilli managed to plate his up really well! We might have to get him a pair of plating tweezers for Christmas to go with the Masterchef apron he’s sporting around the kitchen :)

  • head of broccoli
  • 3 long red peppers
  • 1/2 small onion
  • 4 tbsp red wine vinegar
  • 3 strips bacon
  • 1/2 cup buttermilk (or 1/2 cup milk + 1/2 lemon)
  • 1/2 tsp mustard
  • 1/2 tsp honey
  • glavica brokule
  • 3 crvene rog paprike
  • 1/2 malog luka
  • 4 žlice crvenog vinskog octa
  • 3 kriške pancete
  • 1/2 šalice mlaćenice (ili 1/2 šalice mlijeka + 1/2 limuna)
  • 1/2 žličice senfa
  • 1/2 žličice meda
  • 250 g parsakaalia
  • 3 pitkää, punaista paprikaa
  • 1/2 pieni sipuli
  • 4 rkl punaviinietikkaa
  • 3 palaa pekonia
  • 1/2 kuppi piimää (tai 1/2 kuppi maitoa ja 1/2 sitruuna)
  • 1/2 tl sinappia
  • 1/2 tl hunajaa

  1. Preheat the oven to 200°C.
  2. Roast the whole peppers in the oven for about 20 minutes, until they get charred. When slightly cooled, peel the peppers (don’t worry if there is some peel left) and clean out the seeds.
  3. At the same time, on the side of the same oven tray, roast the bacon slices until they are dry enough to crumble.
  4. Slice the onion half into thin rings, separate them and leave in a bowl covered in red wine vinegar for 15 minutes. Drain.
  5. Cut the broccoli in florets and slice the stalk into small pieces. If you don’t have a steamer, pour a few cm of water in a pot and cover. When it starts boiling, first add the broccoli stalks and cook for 3 minutes, adding the florets for another 2-3 min.
  6. In the meanwhile, prepare the dressing. If you don’t have buttermilk on hand, squeeze the juice of half a lemon into the milk. Set aside for a couple of minutes, then mix in mustard, honey, salt and pepper.
  7. Serve the broccoli with strips of pepper and pickled onions, tossed with dressing and topped with crumbed bacon.
  1. Zagrijte pećnicu na 200°C.
  2. Pecite cijele paprike oko 20 minuta, dok mjestimično ne pocrne. Kad se malo ohlade, ogulite ih (ne brinite previše ako neki dijelovi ostanu neoguljeni) i očistite od sjemenki.
  3. Zajedno s paprikama, u isto vrijeme pecite i pancetu u pećnici dok se ne osuši dovoljno da se može smrviti.
  4. Narežite luk na tanke kriške, odvojite ih i ostavite da se mariniraju u posudi s octom 15 minuta. Ocijedite i ostavite postrani do serviranja.
  5. Narežite brokulu na cvjetiće, a stabljiku brokule po potrebi ogulite i narežite na komadiće. Ako nemate lonac za kuhanje na paru, ulijte nekoliko centimetara vode u lonac, poklopite i pričekajte da voda zakuha. Kuhajte stabljiku brokule 3 minute, pa dodajte cvjetiće brokule na još 2-3 minute.
  6. U međuvremenu pripremite preljev za salatu. Ako nemate mlaćenicu, iscijedite sok polovice limuna u mlijeko i ostavite postrani nekoliko minuta. Zatim umiješajte senf, med, sol i papar.
  7. Poslužite salatu od brokule s narezanom paprikom, ukiseljenim lukom, prelijanu preljevom za salatu, te posipanu komadićima pancete.
  1. Lämmitä uuni 200 asteeseen
  2. Paahda paprikat 20 min, kunnes ne ovat pehmeitä ja alkavat käristyä. Anna paprikoiden viilentyä ja sitten kuori ne ja poista siement. Älä huolehdi jos paprikoihin jää hieman kuorta.
  3. Käytä samaa uunipeltiä pekonin paistamiseen. Paista uunissa kunnes rapeita ja hienonna muruiksi.
  4. Viipaloi sipulin puolikas ja laita viipalot kulhoon punaviinietikan kera. Anna suolata 15 min.
  5. Huuhtele parsakaali ja viipaloi varsi. Leikkaa kukinnot pieniksi paloiksi. Jos et omista höyrytintä niin lisää pari senttimetriä vettä kattilaan ja anna kiehua. Lisää ensin pilkotut varret, hyörystä 3 min, ja sitten lisää kukinnot ja kiehauta 3 min lisää.
  6. Valmistele kastike. Jos kotonasi ei ole piimaa voit lisää maitoon puolikkaan sitruunan mehun ja anna istua pari minuuttia. Kun maito paksuuntuu lisää sinappi, hunaaja, suola ja pippuri. Maista ja säädä mausteilla.
  7. Viipaloi paprikat ja tarjoile parsakaalin sekä sipulin kanssa. Ripottele päälle kastiketta ja pekoni murusia.
