scampi4Tilli and Ruzmarin have switched climates from Nordic to Mediterranean, and their roots are growing quickly in the Croatian soil. While exploring the Adriatic coast we were bewiched by the crystal clear waters, beautiful beaches and of course the delicious seafood! A quick pasta dish and some snapshots are a great way to introduce our followers to Istria, a peninsula in the Northwest of Croatia. We were in Umag, the perfect place to mix partying and lounging on the beach! Earlier it was part of Italy so road signs still have the Italian names for towns and both languages are heard at the local markets. The cuisine is honest and based around the ingredients that grow in Istra, truffles, asparagus and the creatures of the sea, lovingly called frutti di mare (fruits of the sea) in Italian. We will be posting pictures and recipes from different parts of Croatia as we get settled here, so keep checking for our new posts.

  • 500 g squid
  • 1 tbsp olive oil
  • 1/2 leek
  • 3 garlic cloves
  • 4 large, juicy tomatoes
  • 8 scampi prawns
  • 1 bunch parsley
  • zest of 1 lemon
  • 500 g tagliatelle
  • 500 g lignji
  • 1 žlica maslinovog ulja
  • 1/2 poriluka
  • 3 režnja češnjaka
  • 4 velike, sočne rajčice
  • 8 škampa
  • stručak peršina
  • naribana korica 1 limuna
  • 500 g tagliatella
  • 500 g mustekalaa
  • 1 rkl oliiviöljyä
  • puolikas purjo
  • 3 valkosipulin kynttä 
  • 4 isoa, mehukasta tomaattia
  • 8 merirapua (scampi)
  • nippu persiljaa
  • sitruunankuori
  • 500 g tagliatelle pastaa

  1. Clean the squid by removing the head and tentacles from the rest of the body, and then remove the hard shield from the interior of the cavity. The squid is clean when you’ve pulled all the gooey stuff from the insides, peeled off the skin and you’re left with firm flesh.
  2. If you have time, cut the squid into squares and score, both ways, diagonally. This will help the squid pieces to curl up when it is put into a hot pan. Cut up also the tentacles.
  3. Add the leek, halved lengthwise and chopped, to a hot pan with olive oil, saute until soft.
  4. Add garlic, saute until fragrant and then add the chopped tomatoes.
  5. Boil over medium heat, allowing the tomatoes to break down and for a sauce to form. Season with salt and pepper.
  6. Add the squid pieces and after 25 minutes add the whole scampi, cooking for about seven more minutes.
  7. In the meanwhile, cook pasta according to instructions on the package.
  8. Top with finely chopped parsley and zest of lemon, and serve over pasta.

  1. Očistite lignje tako da im najprije odrežete glavu i krakove, pa izvucite kosti i sve mekane dijelove iz unutrašnjosti, te ih ogulite. Lignje su očišćene kad vam je ostalo čvrsto meso i narezani krakovi.
  2. Narežite lignju na veće komade i, ako imate vremena, svaki komad lagano zarezujte pod pravim kutem, dok ne dobijete mrežasti uzorak na mesu. Pripremljene na taj način lignje se zarolaju tijekom kuhanja.
  3. Popržite poriluk na maslinovom ulju dok ne omekša. Dodajte nasjeckani češnjak dok ne zamiriše, a zatim i nasjeckane rajčice.
  4. Kuhajte na srednjoj vatri dok se rajčice ne raspadnu i formiraju umak. Dobro posolite i popaprite.
  5. Ubacite komadiće lignji i lagano krčkajte oko 25 minuta. Dodajte cijele škampe i kuhajte još oko 7 minuta.
  6. U međuvremenu skuhajte tjesteninu u posoljenoj vodi.
  7. Kad su plodovi mora kuhani, umiješajte nasjeckani peršin i naribanu koricu limuna, te poslužite s tjesteninom.
 
  1. Valmistele ja puhdista mustekala irrottamalla pää ja lonkerot. Sitten poista kova kilpi vartalo-ontelosta. Lopuksi vedä ontelosta pois kaikki limaiset jutut ja kuori että jäljelle jää valkoinen ontelo. 
  2. Jos sinulla löytyy aikaa leikkaa mustekala ruudun muotoiseksi paloiksi ja tee vinoiset viillokset. Näin paloista tulee käärylät kun ne kohtaa lämpöä.
  3. Pilko purjo ja lisää kuumaan pannuun joss on oliiviöljyä. Paista kunnes pehmeä
  4. Lisää pilkottu valkosipuli ja paista kunnes ne tuoksuvat. Sitten lisää tomaatit.
  5. Keitä keskilämmöllä kunnes syntyy kastike. Lisää suolaa ja pippuria
  6. Samaan aikaan keitä pasta
  7. Lisää kastikkeeseen mustekala palat ja anna kypsyä 25 minuuttia. Seuraavaksi lisää kokonaiset meriravut ja keitä vielä 7 minuuttia
  8. Lisää pasta kastikkeeseen ja tarjoile pilkotun persiljan ja pilkotun sitruunakuoren kanssa
