Panang Curry

Tilli and Ružmarin are back! We spent all June hopping around the countries of Southeast Asia, munching on everything we could get our chopsticks or hands on. We spent most of our holidays in Cambodia and Laos, but went behind the scenes in Chiang Mai, Thailand, to learn a few local recipes.

Our cooking teacher picked us up from the hostel and brought us to a local market to introduce us to some staples of Thai cuisine. It seemed that all the herbs we used over in Europe had counterparts in Asia, Thai-basil, Thai-coriander, Thai-garlic… Then there were also all the Thai veggies, tiny eggplants that looked like peas and minute chilies affectionately known as rat-poo chilies.

The class was held at our teacher’s house and everyone got to cook (and eat) 6 dishes of their own choice from scratch, using awesome Thai knives and pounding chili paste in an enormous mortar and pestle. We spent the whole evening laughing at our teacher’s stories, especially when we were told to watch our chili fingers or risk dancing “Gangnam style”!

If you ever find yourself in Chiang Mai, make sure to spend the evening at Tom Yum Thai cooking school for the best dinner in town. This curry paste can be adapted for use with any meat or veggies, and if you have leftover paste it can be frozen.

  • 1 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp black pepper seeds
  • 5 dried chilies
  • 1/2 tbsp galangal
    (or 1 tsp powder)
  • 1/2 tbsp lemongrass
  • 1/4 tsp (kaffir) lime peel
  • 1/2 tsp coriander root
  • 5 cloves garlic
  • 2 small shallots
  • 1/2 tsp shrimp paste
  • 1/2 tsp salt
  • 1/2 tsp turmeric
    (fresh or powder)
  • 2 tbsp peanuts
  • 1 žličica sjemenki korijandra
  • 1/2 žličice sjemenki kumina
  • 1/2 žličice zrna crnog papra
  • 5 suhih čili papričica
  • 1/2 žlice svježeg galangala
    (ili 1 žličica galangala u prahu)
  • 1/2 žlice stabljike limunske trave
  • 1/4 žličice kore (kafir) limete
  • 1/2 žličice korijena korijandra
  • 5 režnjeva češnjaka
  • 2 male ljutike
  • 1/2 žličice paste od kozica
  • 1/2 žličice soli
  • 1/2 žličice kurkume
    (svježe ili u prahu)
  • žlice kikirikija
  • 1 tl korianteri siemeniä
  • 1/2 tl kumina siemeniä
  • 1/2 tl tuoreita mustapippureita
  • 5 kuivattua chiliä
  • 1/2 rkl galangal
    (1 tl jauhetta)
  • 1/2 rkl sitruunaruohoa
  • 1/4 tsp (kaffir) lime kuorta
  • 1/2 korianteri varrasta
  • 5 valkosipuli kyntä
  • 2 salottisipulia
  • 1/2 rkl katkaraputahna
  • 1/2 tl suolaa
  • 1/2 tl kurkuma (tuoretta tai jauhetta)
  • 2 rkl maapähkinöitä

  1. Cover the dried chilies with hot water and let stand until soft, then chop into small pieces.
  2. In the meanwhile, roast the cumin and coriander seeds until fragrant. Tip them into the mortar along with the peppercorns and grind.
  3. Add chopped up galangal, lemongrass, lime peel, coriander root, garlic, shallot, shrimp paste, salt, turmeric and pound until they turn into a paste.
  4. Roast the peanuts and add them to the paste along with the chilies and keep pounding until smooth.
  1. Najprije prelijte sušene čili papričice vrućom vodom. Kad papričice omekšaju sitno ih nasjeckajte.
  2. U međuvremenu, popržite sjemenke korijandra i kumina dok ne zamirišu. Ubacite ih u mužar i sameljite zajedno sa zrnima papra.
  3. Dodajte grubo nasjeckani galangal, limunsku travu, koricu limete, korijen korijandra, češnjak, ljutiku, pastu od kozica, sol, kurkumu i zgnječite u pastu.
  4. Popržite kikiriki, pa ga dodajte pasti zajedno s čili papričicama i meljite dok ne dobijete sasvim glatku curry pastu.
  1. Täytä kulho kuumalla vedellä. Haudata chilit vedessä pari kymmentä minuuttia ja sitten hienonna.
  2. Samaan aikaan kun chilit hautuu paahda kumina ja korianteri siemenet kunnes ne alkavat tuoksua, n. 5 min. Kaada mortteliin pippureiden kanssa ja jauhaa kunnolla.
  3. Lisää pilkottu galangal, sitruunaruoho, lime kuori, korianterin varsi, salottit, katkaraputahna, suola, kurkuma ja jauhaa jälleen kunnes hieno tahna syntyy. Tämä voi kestää aika pitkään, n. 10 min
  4. Paahda maapähkinät ja lisää ne, sekä chilit, morttelin. Jauhaa kunnes syntyy hieno tahna.

  • 1 tbsp curry paste (above)
  • 1 tbsp oil
  • 3/4 cup coconut milk
  • 1 medium eggplant
  • 500 g potatoes
  • handful of cherry tomatoes
  • 1,5 tbsp fish sauce
  • 1 tbsp palm sugar
  • 4 kaffir lime leaves
  • 1 big red chili
  • 1 tbsp thai basil leaf
  • 1 lime
  • 1 žlica curry paste
  • 1 žlica ulja
  • 3/4 šalice kokosovog mlijeka
  • 1 patlidžan
  • 500 g krumpira
  • šaka mini rajčica
  • 1,5 žlice ribljeg umaka
  • žlica palminog šećera
  • 4 lista kafir limete
  • 1 velika crvena čili papričica
  • žlica listova tajlandskog bosiljka
  • 1 limeta
  • 1 rkl curry tahna
  • 1 rkl öljyä
  • 3/4 lasi kookosmaitoa
  • 1 keskikokoinen munakoisa
  • 500 g perunoita
  • kourallinen kirsikkatomaatteja
  • 1,5 rkl kalakastiketta
  • 1 rkl palmusokeria
  • 4 kaffir lime lehtä
  • 1 iso punainen chili
  • 1 rkl thai basilikaa
  • 1 lime
  1. Heat the wok pan. Add oil and curry paste, stirring until fragrant.
  2. Add coconut milk to the pan, letting it reach a boil.
  3. Add the potatoes, and after 20 minutes add the eggplant (slices fried off on the pan beforehand).
  4. Season the curry with palm sugar and fish sauce.
  5. Once the vegetables are cooked, turn off the heat, add the cherry tomatoes as well as kaffir lime leaves and sweet basil leaves.
  6. Serve with lime wedges and sliced chili pepper.
  1. Zagrijte ulje u wok tavi i popržite curry pastu dok ne zamiriše.
  2. Ulijte kokosovo mlijeko i ugrijte do vrenja. U međuvremenu narežite patlidžan na ploške i popecite u tavi ili na roštilju.
  3. Dodajte krumpir narezan na kocke i kuhajte 20 minuta, pa dodajte nasjeckane patlidžane.
  4. Začinite curry palminim šećerom i ribljim umakom.
  5. Kad je povrće kuhano, skinite tavu s vatre i dodajte mini rajčice, listove kafir limete i tajlandskog bosiljka.
  6. Poslužite s kriškama limete i nasjeckanom svježom čili papričicom. 
  1. Kuumenna vokkipannu ja lisää öljyä sekä curry tahnaa. Sekoita kunnes se alkaa tuoksumaan.
  2. Lisää kookosmaito pannuun ja kiehauta.
  3. Lisää perunat, ja 20 minuutin jälkeen lisää pannuun munakoisipalat (suositellaan että palat paistetaan ensin pannulla).
  4. Mausta curry palmusokerilla sekä kalakastikkeella.
  5. Kun vihannekset ovat kypsiä, ota pois lämmöltä, lisää kirsikkatomaatit sekä kaffir lime lehdet ja thai basil lehdet.
  6. Tarjoile lime viipaleiden ja pilkoitun chilin kanssa.
