Homemade granola / Domaća granola / Itse tehty Mysli

muesli_2

Homemade granola is all the rage these days and the food blogs are chock full of their own perfect versions that we almost gave up on showing you ours. In the end, we thought it’s just selfish to have a recipe for something that will make you go to bed excited about waking up in the morning and not share the love.

We started making granola last fall and tried many variations, mostly using different dried fruits and nuts. The recipe below is the latest creation, but feel free to mix it up every now and then! We’ve successfully used chopped almonds instead of hazelnuts, many dried fruits (favorites being apricots and cranberries, keeping the total weight around 50 g), and substituted 2 tbsp (out of 5) of the maple syrup for the same amount of honey, mainly to save some coins. Unlike most of the recipes, we add our fruits after the baking so they don’t dry out and become hard. Have fun giving it your own touch and enjoy your mornings!

  • 30 g dried coconut flakes
  • 1/2 tbsp cinnamon
  • 1/2 tbsp vanilla sugar
  • 50 g hazelnuts, finely chopped
  • 5 tbsp coconut oil
  • 5 tbsp maple syrup
  • 2 egg whites
  • 25 g dried dates
  • 20 g raisins
  • 5 g dried strawberries
  • 50 g dark chocolate
  • 450 g zobenih pahuljica
  • 30 g kokosovog brašna
  • ½ žlice cimeta
  • ½ žlice vanilin šećera
  • 50 g lješnjaka, sitno nasjeckanih
  • 5 žlica kokosovog ulja
  • 5 žlica javorovog sirupa
  • 2 bjelanjka
  • 25 g sušenih datulja
  • 20 g grožđica
  • 5 g sušenih jagoda
  • 50 g tamne čokolade
  • 450 g kaurahiutaleita
  • 30 g kuivattua kookos raastetta
  • 1/2 rkl kanelia
  • 1/2 rkl vanilja sokeria
  • 50 g hasselpähkinöitä, hienonnettuina
  • 5 rkl kookosöljyä
  • 5 rkl vaahterasiirappia
  • 2 munan valkuaista
  • 25 g kuivattuja taateleita, hienonnettuina
  • 20 g rusinoita
  • 5 g kuivattuja mansikoita
  • 50 g tummaa suklaata
  1. Preheat the oven to 160 °C.
  2. In a big bowl, combine oats, coconut flakes, cinnamon, vanilla sugar and chopped hazelnuts.
  3. Measure the coconut oil into a cup and microwave for about 15 s, until melted.
  4. In a separate bowl, lightly beat egg whites with a fork. Add melted coconut oil and maple syrup (don’t worry if it looks separated, it will all come together in the next step).
  5. Pour the wet ingredients into the oat mixture. Mix with a rubber spatula until all the oats get a little darker and sticky-looking.
  6. Divide mixture in half and spread each half on a baking tin lined with a sheet of baking paper. Make sure it’s evenly distributed in a circle with oats tightly packed together. Bake both parts at the same time, without mixing, until golden, 20-30 min (if your oven is anything like ours, the bottom half will take a few minutes longer).
  7. In the meanwhile, chop all the fruits and chocolate in tiny pieces. Pull the granola out of the oven and spread the fruits on top while still hot. When completely cooled, do the same with chocolate.
  8. Transfer to big jars and keep out of sight or it will disappear before breakfast. Best served with natural yoghurt, or as a snack straight from the jar.
  1. Zagrijte pećnicu na 160 °C.
  2. U velikoj zdjeli pomiješajte zobene pahuljice, kokosovo brašno, cimet, vanilin šećer i nasjeckane lješnjake.
  5. Ulijte vlažne u suhe sastojke i dobro izmiješajte gumenom lopaticom, dok zobene pahuljice ne izgledaju tamnije i ljepljivo.
  7. U međuvremenu, sitno nasjeckajte sušeno voće i čokoladu. Kad izvadite granolu iz pećnice, još vruću posipajte voćem. Isto učinite i s čokoladom kad se do kraja ohladi.
  9. Säilytä mysli isossa purkissa ja piilota ettei musli häivy ennen seuraavaa aamua. Tarjoile luonnon jogurtin kera tai napostele suoraan purkista.
