Jamon Croquetas / Kroketi s pršutom / Kinkku kroketit

croq1Tilli lived in Spain for a year and he brought some influences to the northern kitchen. Normally there is not much deep-frying going on in our kitchen, but this is an exception. Every once in a while its perfectly ok to splash a bit more oil in the pan and really indulge, for example on Friday night. These savory bites are really a party in your mouth. We put our stale bread to good use by making fresh breadcrumbs, and these really made a difference in the crunchy texture. We served the croquetas with aioli and, to calm our deep-frying worries, a big citrus salad! We hope you enjoy.

salad-crocq(serves 4 / 4 porcije / 4 annosta)

  • 1 kg potatoes
  • 50 g Serrano ham
  • 25 g strong-flavored, dry cheese (Hirten, parmesan)
  • ½ tbsp olive oil
  • 3 eggs
  • 1 tbsp chopped parsley
  • ½ cup flour
  • ½ cup breadcrumbs
  • 2 cups sunflower oil

1. Peel and chop potatoes, boil for about 15-20 min, until tender.
2. Finely dice the ham and parsley, crumble the cheese.
3. Cool the potatoes and then mash together with the olive oil and 1 egg.
4.Mix the ham, cheese, and parsley into the potato mash, then place mash in the freezer for 15 min to make it easier to work with.
5.Take a spoonful of mash and shape into croquetas. Dip first into flour, then coat generously with beaten eggs and finish in breadcrumbs.
6.Heat the oil in a small pot and fry croquetas on medium heat until golden brown.

  • 1 kg krumpira
  • 50 g pršuta
  • 25 g tvrdog sira (Hirten, parmezan)
  • ½ žlice maslinovog ulja
  • 3 jaja
  • 1 žlica nasjeckanog peršina
  • ½ šalice brašna
  • ½ šalice krušnih mrvica
  • 2 šalice suncokretovog ulja

1. Ogulite krumpir i narežite na kockice, pa kuhajte u posoljenoj vodi dok ne omekša, 15-20 min.
2. Sitno nasjeckajte pršut, sir i peršin.
3. Ohlađeni krumpir zgnječite zajedno s maslinovim uljem i jednim jajetom.
4. Umiješajte sir, pršut i peršin u krumpir, pa ubacite u zamrzivač na 15 min.
5. Oblikujte žlicu mješavine u kroket, pa umočite redom u brašno, umućena jaja i na kraju krušne mrvice.
6. Zagrijte suncokretovo ulje u malom loncu i pržite krokete na srednjoj temperaturi dok ne poprime zlatnu boju.

  • 1 kg jauhoisia perunoita
  • 50 g ilmakuivattua kinkkua
  • 25 g vahvaa, kuivaa juustoa (esim. Hirten, parmesan)
  • ½ rkl oliiviöljyä
  • 3 kananmunaa
  • 1 rkl hienonnettua persiljaa
  • ½ kuppia jauhoa
  • ½ kuppia korppujauhoa
  • 2 kuppia aurinkokukkaöljyä

1. Kuori ja pilko perunat, keitä 15-20 min kunnes kypsiä ja pehmeitä.
2. Hienonna kinkku, juusto ja persilja.
3. iilennä perunat vähän aikaa ja sitten muhenna oliiviöljyn ja yhden kananmunan kanssa.
4. Sekoita kinkku, juusto ja persilja perunamuhennukseen. Voit pistää muhennuksen nopeasti pakkaseen, noin 15 min, että siitä on helpompi muodostaa kroketteja.
5. Ota lusikallinen muhennusta ja muodosta kroketteja. Ensimmäiseksi upota kroketti jauhoon, sitten vatkattuun kananmuniin ja lopuksi korppujauhoon.
6. Lämmitä 2 kuppia aurinkokukkaöljyä pienessä kattilassa ja paista kroketit kunnes kultaisen herkullisia.
