Grandma’s Apple Pie / Bakina pita od jabuka / Isoäidin omenapiirakka

This traditional Croatian apple pie is something Ružmarin grew up with, having both her grandmas living close and dropping them off on a regular basis. She took it for granted until she moved too far for the pies to arrive in an edible state. Now she is finally daring enough to recreate the recipes, and this one was a hit! Tilli thought it was just like grandma’s, which is about the biggest compliment a girl can get. The original recipe worked great at the first attempt, but the amount of grated apples looked huge before baking, so we cut it in half. Next time we will definitely stick to the 8-10 apples for that luxurious, thick apple layer. The photo below shows a test run of the fresh cheese pie, but more about that in some other post.

  • 90 g butter
  • 100 g sugar
  • 1 egg
  • 250 g all-purpose flour
  • 6 g baking powder
  • a pinch of salt
  • 2 tbsp sour cream
  • 8-10 big apples
  • 1 tsp cinnamon
  • 90 g maslaca
  • 100 g šećera
  • 1 jaje
  • 250 g brašna
  • 6 g praška za peciva
    (1/2 vrećice)
  • prstohvat soli
  • 2 žlice kiselog vrhnja
  • 8-10 velikih jabuka
  • 1 žličica cimeta
  • 90 g voita
  • 100 g sokeria
  • 1 kananmuna
  • 250 g vehnäjauhoa
  • 6 g leivinjauhetta
  • ripaus suolaa
  • 2 rkl smetanaa
  • 8-10 isoa omenaa
  • 1 tl kanelia

1. Beat butter and sugar until creamy, add the egg and beat until well combined.
2. In a separate bowl, combine flour, baking powder and salt.
3. Add the dry ingredients to the wet, mixing well with a spatula. Add sour cream, one tbsp at a time, and knead until the dough becomes soft and smooth.
4. Split the dough in half, flatten each part into a rectangle and wrap in plastic foil. Put in the fridge for 30 min, or if you are pressed for time in the freezer until it becomes more compact, but not hard.
5. Preheat the oven to 180 °C. Butter a 23 x 33 cm baking dish.
6. On a sheet of baking paper, roll out the first dough to the size of the dish. Transfer it to the dish by flipping the baking paper and peeling it off.
7. Grate the apples and mix with cinnamon. Spread over the bottom dough.
8. Repeat step 6 with the top dough and poke the top with the fork. Bake until golden, about 30-40 minutes. Serve with vanilla ice cream while it’s still hot or enjoy with your coffee cooled and sprinkled with powdered sugar.
1. Zajedno izmiksajte maslac i šećer, te dodajte jaje i ponovno miksajte dok se svi sastojci ne povežu.
2. U drugoj posudi, pomiješajte brašno, prašak za peciva i sol.
3. Dodajte suhe sastojke u vlažne i dobro izmiješajte. Dodajte kiselo vrhnje, jednu po jednu žlicu i zamijesite tijesto dok ne postane mekano i glatko.
4. Podijelite tijesto na pola, oba dijela spljoštite u pravokutni oblik, omotajte plastičnom folijom i ostavite u hladnjaku oko 30 minuta. Ako vam se žuri, tijesto možete nakratko ubaciti u zamrzivač dok se malo ne stvrdne.
5. Zagrijte pećnicu na 180 °C. Namastite pleh za pečenje veličine 23 x 33 cm.
6. Na listu papira za pečenje razvaljajte prvu polovicu tijesta na veličinu pleha. Preokrenite papir za pečenje tako da je tijesto s donje strane i prebacite u pleh, pa zatim odlijepite papir.
7. Naribajte jabuke i pomiješajte ih s cimetom. Rasporedite po tijestu.
8. Ponovite korak 6 s drugom polovicom tijesta i izbodite tijesto viljuškom. Pecite do zlatne boje, oko 30-40 minuta. Pitu poslužite vruću sa sladoledom od vanilije ili ohlađenu uz kavu, posipanu šećerom u prahu.

2. Toisessa kulhossa sekoita jauhot, leivinjauhe ja suola.
3. Lisää kuivat ainekset voi sekoitukseen ja lisää smetana ruokalusikallinen kerrallaan. Vaivaa taikina kunnes pehmeä.
4. Jaa taikina kahteen osaan ja litistä molemmat suorakulmioiksi. Kääri folioon ja laita jääkaappiin 30 min.
5. Lämmitä uuni 180 °C ja voitele 23 x 33cm kokoinen vuoka.
6. Pyöritä yks taikina leivinarkilla niin että se on vuoan kokoisia. Käännä leivinarkki niin että taikina menee vuokaan.
7. Raasta omenat ja sekoita kanelin kera. Levitä ensimmäisen taikinan päälle.
8. Pyöritä toinen taikina ja levitä se omenakerroksen päälle. Käyttäen haarukkaa tee pari reikää ylä-taikinaan ja leivo 30-40 min, siihen asti kunnes piirakka on kultaisen herkullinen.
