Last week was Ružmarin’s 25th birthday and we were spending the day out and about, so we wanted to make some fast and crowd-pleasing party food. We ended up serving different spreads on hot slices of bread coming straight from the oven and they turned out to be the perfect choice.

Artichoke tapenade / Tapenada s artičokama / Artisokka tapenade
(adapted from Smitten Kitchen)
(makes enough for about 15 breads / za 15 kriški kruha / 15 pientä leipää)

  • 1 can artichoke
  • 1 cup green olives, pitted
  • 1,5 tbsp capers
  • 2 tbsp olive oil
  • 1 tbsp lemon juice, freshly squeezed

Combine all the ingredients in a food processor until you get a chunky paste, season with salt and freshly ground pepper. Spread over hot bread or look for a way to use leftovers in the next post.

  • 1 konzerva artičoka
  • 1 šalica zelenih maslina, bez koštica
  • 1,5 žlica kapara
  • 2 žlice maslinovog ulja
  • 1 žlica soka od limuna, svježe iscjeđenog

Ubacite sve sastojke u sjeckalicu i miksajte dok ne dobijete grubu pastu. Začinite solju i svježe mljevenim paprom. Namažite na vrući kruh ili potražite recept za ostatke u sljedećem postu.

  • 1 kuppi vihreitä oliiveitä
  • 1,5 rkl kapriksia
  • 2 rkl oliiviöljyä
  • 1 rkl sitruuna mehua

Sekoita kaikki ainekset tehosekoittimessa, tavoitteena karkea tahna. Mausta suolalla ja pipurilla. Levitä lämpimälle leivälle tai keksi fiksu tapa käyttä jämät näin.

Roasted red pepper spread / Namaz od pečene crvene paprike / Paahdettu Paprika Levite

(yields enough for 15 breads / za 15 kriški kruha/ 15 pientä leipää)

  • 200 g jarred roasted red peppers
  • 2 tbsp parmesan, grated
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 100 g ricotta
  • fresh basil for serving

Blend roasted peppers with olive oil, oregano and parmesan, season with salt and freshly ground pepper. For serving, first spread a tablespoon of ricotta on the hot bread, topping with the roasted red pepper spread and garnish with basil.

  • 200 g pečene crvene paprike iz staklenke
  • 2 žlice naribanog parmezana
  • 1 žlica maslinovog ulja
  • 1 žličica oregana
  • 100 g svježeg sira
  • svježi bosiljak za serviranje

Pomiješajte papriku, maslinovo ulje, oregano i parmezan u sjeckalici, začinite solju i svježe mljevenim paprom. Za posluživanje, prvo namažite žlicu sira na vrući kruh, dodajte namaz od paprike i ukrasite svježim bosiljkom.

  • 200g paahdettuja paprikoita
  • 2 rkl parmesan juustoa, raastettuna
  • 1 rkl oliiviöljyä
  • 1 tl oreganoa
  • 100 g ricotta juustoa
  • tuoretta basilia

Sekoita paprikat, oliiviöljy, oregano ja parmesan juusto. Mausta suolalla ja pipurilla. Kun tarjoilet levitä ricotta juusto ensin leivälle ja sen jälkeen levitä paahdettu paprika levite juustopohjan päälle.

Roasted grape & thyme crostini / Kruh s pečenim grožđem i timijanom / Paahdettu rypäle ja timjami crostini leivät

(makes about 15 servings / za 15 kriški kruha/ 15 pientä leipää)

  • 200 g red grapes
  • 30 g parmesan, shaved
  • 15 sprigs of fresh thyme
  • 1 tsp olive oil

Preheat the oven to 175 °C. Pull the grapes off the stems and spread on a sheet of baking paper. Sprinkle with olive oil and thyme sprigs. Bake for about 30 min, until the grapes get wrinkled and let out some of the juice. Serve on hot bread topped with shaved parmesan.

  • 200 g crvenog grožđa
  • 30 g parmezana, narezanog na listiće
  • 15 grančica svježeg timijana
  • 1 žličica maslinovog ulja

Zagrijte pećnicu na 175 °C. Skinite grožđe s peteljki i rasprostrite na papiru za pečenje. Pokapajte maslinovim uljem i dodajte stabljike timijana. Pecite oko 30 minuta, dok se grožđe ne nabora i pusti nešto soka. Poslužite na vrućem kruhu s parmezanom.

  • 200 g rypäleitä
  • 30 g raastettua parmesan juustoa
  • 15 lehvää tuoretta timjamia
  • 1 rkl oliiviöljyä

Lämmitä uuni 175 asteeseen. Irrota rypäleet oksilta ja levitä leivinpaperille. Ripottele rypäleet oliiviöljyllä ja timjamilla. Paista uunissa 30 min, siihen asti kunnes rypäleet ovat ryppysiä ja ovat hieman kuivuneet. Tarjoile lämpimän leivän päällä ja ripottele päälle parmesan juustoa.
